For those who have wondered how area chefs create their signature dishes, a new show on Lakes Region Public Access aims to please — and tempt the taste buds.

Amy Landers, the executive director of the Lakes Region Association, a nonprofit tourism and marketing organization in Tilton, said the first episode of "The Lakes Region Cooking Show" will air soon on Lakes Region Public Access and will feature culinary students from Lakes Region Community College learning how to make seafood gumbo and Andouille sausage at Cactus Jack's in Laconia.

Landers is also a member of the Advisory Committee for the Hospitality Programs at the Lakes Region Community College, a committee that is always looking for ways to gain more exposure for the hospitality and culinary programs.

Landers said it was at one of the committee meetings that she suggested a cooking show to educate the committee about the hospitality programs.

Patrick Hall, program director of the hospitality programs at the college and an Advisory Committee member, said he suggested bringing some of the culinary students to area restaurants as a learning experience.

Hall said Amy Landers, executive director of the Lakes Region Association in Tilton, expressed interest in the idea and added her suggestion that the visits could be filmed.

After a busy summer for both Hall and Landers, the project started taking shape in the fall and the first restaurant visit was filmed just before Christmas.

Hall said he took three of his senior culinary program students to Cactus Jack's in Laconia, which is owned by Great New Hampshire Restaurants, where Nicole Barreira, special events chef, demonstrated how to make some signature dishes.

Halls said the filming went well and the students got to see how the kitchen was organized and learn different cooking techniques.

"It's a great way to introduce students to different area restaurants and different styles of cooking," Hall said. "It is also a great way to let the community know about our program and about the different types of cuisine we have in the Lakes Region."

For the Lakes Region Association, Landers said the show is a great opportunity to enhance the partnership with the college while providing an added benefit to the association's restaurant-owning members.

"The goal of the Lakes Region Cooking Show is to provide the community with new recipes to use in their homes, educate the region about the Lakes Region Community Technical College, enrich the students education with a hands-on, live cooking show and provide more exposure for the many wonderful restaurants we have in the area," Landers said.

The first episode was filmed on Dec. 17 and will air soon after Lakes Region Public Access completes the editing and production.

Landers said Lakes Region Public Access was enthusiastic about the idea of the Lakes Region Cooking Show because nothing like it is currently being done in the region.

The cooking show is the first project the Lakes Region Association has done with Lakes Region Public Access.

The next filming will be done in early February at T-Bones Great American Eatery in Laconia, owned by the same parent company and located in the same building as Cactus Jack's.

"We will move the show around to other restaurants to provide exposure for our restaurant members and allow the students at Lakes Region Community Technical College to network with other chefs," Landers said.
